Spicy Butter Beans

Spicy Butter Beans




2 cans of Butter Beans (cook as directed)
1 pkg of Bacon (cut into pieces)
1 cup leeks (chopped)
1-2 Jalapeno peppers(seeded)  or  1 pablano pepper
3 cloves garlic
1 -2 cups chicken broth



Add all ingredients except leeks, peppers and cook for 1 hr or so

Taco Salad Bake

Taco Salad Bake


2 lbs ground turkey with taco spices already added/comes in a roll
(buy from wally world for a buck for 1 lb= $2.00)

1 can of black beans
( I used ortega, had stacked two coupons and got them for 25 cents per can)

1 8oz can of tomato sauce (got for 33 cents)

16 oz of water

1 12 or 24 pack of corn torillas, depends on how many layers you want.
(I bought a 12 pack for a buck)

1 cup of frozen white corn
( the package was for 99 cents and I usually get at least usages out of it with other one pot meals)

1/4 cup chopped cilantro for garnish(33 cents per bunch which I did not use all of it of course so I am able to get more usages from it in other meals)

1/2 cup of grape tomatoes sliced in half for garnish (little pricey sometimes, my hubby eats on these with his meals so prob last a week) Maybe $1.68 for five days not bad at all

1/2 cup chopped pablano pepper (boiled and skin peeled)

5-6 use cloves and make a garlic paste ( I buy a 3 lb container at cosco and freeze it in container and just pull from it when i need it. This usually last about a month and half) Cost about $ 5 bucks

1/2 cup chopped onion (free 20 lbs of white onion)

4 tbsp of red chile ( I buy a 14 oz container of a liquid red chile in freezer dept of Albertons. It cost around $2 bucks and last a very long time.

2 tsp of cumin

1 8oz pkg of mexi blend grated cheese kraft
on sale for $ 1.49 using coupon.

1 bundle of romain lettuce (99 cents)

salt and pepper to taste


Total cost (minus extra usages) approx $10.58 for a family of 6

I first ground meat then add garlic paste, pablano peppers, red chile and cumin. I then mix in corn , black beans and tomato sauce along with 16 oz of water. I cook it down just a little. While cooking down I heat up corn tortillas in skillet with a little oil.

I use a standard cake size pan and put a layer of corn tortillas (five) I then layer with cheese and meat mix, layer again with cheese, then five more tortillas. Repeat process. The last layer will have two tortillas and cheese. I sprinkle the top with onion (makes it more visable for my kids so they can pick them out). Also add the sliced grape tomatoes. I bake at 350 for about 15-20 minutes and sprinkle with fresh cilantro.

I place chopped romain Lettuce on plate and put the Taco Bake on top. You can use sour cream, salsa or a chiplote ranch over top.

Today, was an easy day! The following recipe is one of my eldest son's favorite meals. He enjoys this so much that he is a pro at making it for the whole family now. With just basically five ingredients and really no effort to making it is simple and so quick to make. You ask what are the five ingredients? Here goes: sausage,potatoes,cabbage,onion and spices. I really do not know how I came across this recipe but my family really enjoys eating this meal.
I have never given this recipe a name but I will call it Simply sausage!


2 pkgs of sausage (any kind)
1 head of cabbage,green and chopped
3 cloves fresh garlic minced
6 potatoes (about one for each person) cut to your liking (thickly chopped, sliced,cubbed)
1 med onion
spices: sea salt,ground pepper and a couple dashes of cayenne pepper.


In a sautee pan place enough oil in pan to crisp potatoes. Lightly brown potatoes and then add onion and garlic along with spices. You will then add sausage and cabbage and cook til cabbage is slightly wilted.


This takes no time at all and it is so simple!!!

Eats for tonight "cabbage patch stew"

Well tonight was a very simple night, although I had made this just three days ago my kids or shall I say two of my kids had put in a simple request for Cabbage patch stew! This meal is so simple and just down right comforting! I remember my mom made something very similar when I was a child. This version however is from my mother-in-law. My moms had more of a kick to it (spicy). I usually serve this with either corn bread or yeast rolls. So here goes folks I hope you enjoy and make it for your family! Lots of love to you all!

Cabbage Patch Stew

1 pound of ground beef
1 small chopped onion
3-4 cloves of minced garlic
salt and pepper to taste
1 can of pinto beans ,drained
1 can of Northern Beans,drained
1 can of crushed tomato
1 small head of cabbage,chopped (or can use just half depending or taste)
add water to desire filling

First brown meat and then add onion,garlic,salt and pepper.
then, add beans and crushed tomato to mixture. After about five minutes add chopped cabbage. Cook for about 15-20 minutes on medium heat. Now if you want the "kick" add diced jalapenos, or diced pablano peppers or even a couple dashes of cayenne pepper!

It is really that simple and tasty!
